Blueberry Streusel Muffins


Blueberry Streusel Muffins
Recipe from here
  • 1/3 c. sugar
  • 1/4 c. butter, softened
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 2 1/3 c. flour (I used 1 c. whole wheat)
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 1/2 c. fresh or frozen blueberries

Streusel Topping

  • 1/2 c. sugar
  • 1/3 c. flour
  • 1 tsp. cinnamon
  • 1/4 c. butter

Cream sugar and butter. Add egg and vanilla; mix well. Combine flour, baking powder and salt; add to the creamed mixture alternately with milk. Fold in blueberries. Scoop batter into greased muffin tins (or paper-lined tins).

For Streusel: Mix sugar, flour, and cinnamon. Cut in butter until crumbly. Sprinkle over muffins.

Bake at 375° for 25-30 minutes. Makes 12-18 muffins.


Our Verdict: Well, we love muffins. :) I alternate between this and one other blueberry muffin recipe as my go-to recipes for blueberry muffins. They're great with fresh or frozen berries. I like being able to use whole wheat flour in my baking, and so often with muffins and quick breads I will substitute at least part of the flour with whole wheat.

Yogurt Coffee Cake Muffins

I made these delightful little muffins the other night and they were a hit! Ok, it doesn't take much for something to be a hit in our house. Especially since I only have to please myself and Brandon! But nonetheless, we really enjoyed them!! :)

Yogurt Coffee Cake Muffins

Recipe from: Amy's Finer Things

  • 1/2 c. butter
  • 3/4 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 1/2 c. plain yogurt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 c. unbleached, all-purpose flour
  • 1 c. whole wheat flour

Topping:

  • 1/2 tsp. cinnamon
  • 3 T. sugar
  • 1 1/2 T. brown sugar

** sour cream is a nice substitute for plain yogurt

Cream butter and sugar. Add eggs, yogurt (sour cream) and vanilla. Mix well. Combine baking soda, baking powder and flours. Add to wet mixture. Scoop into greased muffin tins. Sprinkle topping over each muffin. Bake at 350° for 20-22 minutes. Yield: 2 dozen muffins

Chocolate Chip Snack Cake



I wanted to make snacks for our small group, and so I tried these. We really really liked them! They are healthy and different! The combination of the cinnamon sugar with the chocolate chips was really different, and I liked it a lot! I also liked that it used low-fat sour cream and applesauce instead of lots of oil!

  • 1/4 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 egg whites
  • 1 cup (8 ounces) reduced-fat sour cream
  • 2/3 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda

  • TOPPING:
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup miniature semisweet chocolate chips

Directions

  • In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add egg, then egg whites, beating well after each addition. Beat in the sour cream, applesauce and vanilla (mixture will appear curdled). Combine the flours, baking powder, salt and baking soda; stir into butter mixture just until blended.
  • Pour half of the batter into a 13-in. x 9-in. baking pan coated with cooking spray. Combine sugar and cinnamon; sprinkle half over the batter. Top with half of the chocolate chips.
  • Gently top with remaining batter; spread evenly. Sprinkle with remaining cinnamon-sugar and chips. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool on a wire rack. Yield: 15 servings.

Buttermilk Cinnamon Bread


Something different! Not a dinner recipe! :) I made this last week (in March!), and it was pretty good. Not my favorite quick bread, but it was ok. I can't quite put my finger on what it needed, I'll have to eat some more to try to figure it out!! :)

*Handy Kitchen Tip* If you don't have buttermilk on hand you can make it! For each cup of buttermilk needed, measure 1 Tablespoon of vinegar and enough milk to make 1 cup. Let sit for about 5 minutes before using.

Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 2-1/2 cups sugar, divided
  • 2 cups buttermilk
  • 2 eggs
  • 1 tablespoon ground cinnamon
  • 1 to 2 tablespoons finely chopped walnuts (I left these out because I don't like walnuts. Maybe that's what it needed?!?!)

Directions

  • In a large bowl, combine flour, baking soda and salt. In a small bowl, combine oil and 1-1/2 cups sugar. Add buttermilk and eggs; mix well. Stir into dry ingredients just until moistened. Fill two greased 8-in. x 4-in. or five greased 5-3/4-in. x 3-in. x 2-in. loaf pans about a third full. Combine cinnamon and remaining sugar; sprinkle half over the batter. Top with remaining batter and cinnamon-sugar. Swirl batter with a knife. Sprinkle with nuts.
  • Bake at 350° for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool in pans for 10 minutes before removing to wire racks. Yield: 2 loaves or 5 mini loaves.
